WEDNESDAY'S SOUP: BROCCOLI & A VEGETABLE SOUP (574 hits)


This really a very light soup,
it doesn't take long to make
and it can be served before
a main course, or if you just
want a light meal instead of
a heavy one.





INGREDIENTS:

Frozen or fresh broccoli

Parsley [fresh, or flakes]

Chicken broth

A Vegetable[Choose a solid vegetable you like for example, carrots, potato, corn, green beans]

You may add soup starter if desired.


In a soup pot bring water to boil, adding freshly wash broccoli and your one vegetable. Add in salt/pepper to taste. Stir in chicken broth to boiling pot. Sprinkle in light parsley, or add fresh parsley. Boil till vegetables are tender to your taste.

Serve in a bowl topped with parsley flakes or bacon bits.

This is a very light meal, so if that's your plan for soup day this soup is a great answer! You can dress it with a few crackers though!

Jen, I enjoy broccoli too; yes, all the soup recipes including this is one are my own recipes. Give it a try next time you want a broccoli soup. I think you and your little one might like it.:)

I like making soup creations, some I admit are still in experimental stages.....

I've eaten this before while in college and it tasted really good! Especially when the soup is garnished with grated cheese. Sometimes I've even put croutons in mine...
