Health Food stores have a form(in name only-unless they employ an Ugandan Chef)

I got my first taste in USA at a health food place 60s

....but when I moved to Africa....I had an Ugandan Wife of a friend make me PEANUT SOUP...!

Peanut soup is a recipe originating from Uganda

For 4 people

Preparation: 10 minutes.........cooking: 10 minutes

Ingredients

250 g peanuts
1 small onion
½ litre of vegetable stock
¼ litre milk
1 teaspoon of cornstarch
½ red chilli finely minced
Salt
Preparation
Peel the onion and crush in a blender
When it is pureed, add the peanuts
Dilute the cornstarch with a bit of the milk
Warm the milk in a saucepan
Add the diluted cornstarch and mix well until you get a smooth sauce
Add the stock, the peanuts, the chili and the salt
Bring to the boil as you continue to stir
Leave to simmer on low fire for 5 minutes
Crush the soup in the blender again before serving.
