
Mushrooms are one of my top superfood choices that promote good health and weight loss. They are absolutely delicious to taste, packed full of nutrients, and extremely low in calories (only 15 calories in 1 cup chopped) as they contain about 80 to 90 percent water. Mushrooms are also high in dietary fiber and low in sodium and fat. In addition, they are an excellent source of potassium. In fact, one medium Portobello mushroom (~4 calories) has more potassium than a medium-sized banana (~110 calories).
Mushrooms are also a great source of selenium, the antioxidant that works with vitamin E to protect our body’s cells from the damaging effects of free radicals. Selenium has been shown to protect against cancer, heart disease, and arthritis. You can reap the full nutritional benefits of mushrooms by consuming them raw or lightly cooked. Mushrooms can most certainly stand alone but they also taste great in just about any food preparation including salads, omelets, soups, stews, salads, and stir-fried preparations.
