Why the only race (Black Americans) is mentioned in the Constitution and not other races?

The Mexicans are not mentioned in White America’s founding father’s Constitution! The Japanese or the Chinese are not mentioned, only Black Americans descendants of plantation slaves are written into the White man’s constitution. Why?
