I had no idea there was a National Gumbo Day. And a lot of Louisiana cooks love our gumbo! The main part is a good roux. If you know how to make homemade gravy, then you can make roux. The rule of thumb is not to get it to burn more of an almond to chocolate color. I really like the flavor that okra brings to the dish. Here in New Orleans we have what's called an annual "Creole Gumbo Festival" which is held on the Second Saturday & Second Sunday in November in the historical Louis Armstrong Park. The festival which is free and open to the public to attend, was started by the New Orleans Jazz and Heritage Foundation. The festival features live music from local R&B, gospel, and jazz bands, children's arts and crafts activities, and a variety of gumbo for sale.

Okra is also good for a hair and scalp conditioner. The early African tribes would steam raw okra seeds and water and massage the mixture into the hair to moisturize the scalp while preventing dandruff. I eat okra often either fried, or in a gumbo dish, or I eat okra with stewed tomatoes and corn, it's delicious. Below is the best gumbo recipe you've ever tried:
